I have eaten some version of this oatmeal basically every day for at least 4 years. I genuinely look forward to it every morning.
I have slowly converged on what I consider the perfect oatmeal. There is nothing particularly complicated about it, and there isn't really a recipe: I don't measure the ingredients, and I change things around depending on what I have in the kitchen. But this is the formula I come back to over and over again.
It also looks absolutely terrible. There will be no pictures of it. Basically anyone who has ever seen me make it makes fun of how it looks. I don't care. It tastes good, it keeps me going until lunch, and I choose it over a much prettier breakfast.

Blueberries
Milk or water
That's it. I genuinely just cook the oats in a big bowl and throw everything else in.
For hot oatmeal, I usually use water. I prefer vegan protein powder here because I find that it incorporates much better into hot oatmeal than whey.
For overnight oats, I'll mix everything together with (protein) milk and leave it in the fridge overnight. This is when I sometimes use whey protein, since I don't find the texture difference as noticeable when everything is cold.
It's everything you need: protein, fiber, healthy fats, complex carbohydrates, and plenty of micronutrients.
Oats give me carbohydrates and fiber.
Cacao powder adds a ton of chocolate flavor without needing much sugar. It is also rich in antioxidants.
Chia seeds add fiber, healthy fats (including omega-3s), and some protein.
Hemp seeds bring more protein, healthy fats, and a variety of minerals.
Peanut butter adds healthy fats and protein - and, more importantly, makes the oatmeal taste much better.
Protein powder: Why (at least) 45g of protein in the morning is good for you needs no explanation.
Blueberries add natural sweetness, fiber, and antioxidants.
The quantities above are really just a starting point. I don't measure anything.
No blueberries? Use a banana, strawberries, raspberries, or whatever fruit you have. Want it sweeter? Add a little honey. Want it thicker? Use less liquid. Want more peanut butter? Add more peanut butter. The only rule is that it should look terrible.
And after years of eating it almost every morning, I can confidently say that I have no plans to stop.
